Diese Internationale Norm legt allgemeine Anforderungen fest und gibt eine Anleitung für die drei wesentlichen Anwendungen: Realisierung der Normen für den Nachweis oder die Zählung von Mikroorganismen; Verwirklichung einer guten Laborpraxis in Laboratorien der Lebensmittelmikrobiologie; Anleitung zur Akkreditierung von Laboratorien der Lebensmittelmikrobiologie. Die Norm ist hauptsächlich für das Arbeiten mit Bakterien, Hefen und Schimmelpilzen vorgesehen und sollte durch eine spezifische Anleitung für Prionen, Parasiten und Viren ergänzt werden. Zweck dieser Norm ist es, die Gültigkeit der Untersuchungen sichern zu helfen, die Gleichartigkeit der bei diesen Untersuchungen angewandten allgemeinen Techniken für alle Laboratorien sicherzustellen, eine Hilfe bei der Erzielung gleichartiger Ergebnisse in unterschiedlichen Laboratorien zu leisten und zur Sicherheit des Laborpersonals durch Vermeidung von Infektionsrisiken beizutragen.
